Shiitake and Red Onion Pizza
Pizza Crust Ingredients:
2 ¼ tsp. quick-rise yeast
1 tsp. sugar
1 c. warm water
2 Tbsp. olive oil
2 ½ c. flour (we use white whole wheat)
1 tsp. garlic powder
1 tsp. onion powder
2 Tbsp. mushroom powder
2 tsp. sea salt
Pizza Crust Directions:
Put sugar in a glass bowl. Pour warm water over the sugar. Sprinkle yeast on top of the water. Cover with a towel for 10 minutes. Add other ingredients. Mix well. Cover with a towel for 10 minutes. Flatten on greased pan. Add toppings. Bake at 450 degrees for about 12 minutes.
Toppings Ingredients:
1 ½ oz. Dried Shiitake Mushrooms
2 c. boiling water
2 Tbsp. olive oil
1 medium purple onion, sliced
Garlic, Sea salt, Pepper
2-3 c. freshly grated cheese (mozzarella, sharp, parmesan)
1/3 c. butter, melted
Rehydrate dried mushrooms: Cover dried mushrooms with 2 cups boiling water in a glass bowl. Cover for 8-10 minutes. Remove mushrooms, squeeze as much water out of the mushrooms as possible. Set aside. Strain mushroom stock. Store and/or freeze the stock for another recipe.
Toppings Directions:
Heat 2 Tbsp. oil in a skillet. Add onions. Cook 1 minute. Add mushrooms and seasonings. Cook 1 minute or until mixed well. Remove from heat. Brush dough with melted butter. Sprinkle garlic over the butter. Sprinkle half of the cheese on the crust. Arrange mushrooms mixture evenly over the dough. Cover with the rest of the cheese. Bake at 450 degrees, 12 minutes, or until golden brown. Enjoy!
