Possibly the most popular gourmet mushroom. Shiitake are dense and buttery. Remove the stems, sauté, and add to rice, fish, pasta, chicken and/or vegetables. Bake Shiitake for a crispy outside and tender delicious interior.
Don't toss the stems. Dry into a powder and boils into a rich stock.
